Beef and Cheese Muffins

Beef and Cheese muffins are a staple in my house, that I often make a batch and freeze and when I need a quick meal, just heat in the oven and enjoy.

It is as usual a simple recipe, that takes no time to make, but at the same time is delicious, nutritious and filling.

I use flaxseed meal in this recipe (for texture), but you can replace with extra almond flour/meal, and it will work just fine.

Beef and cheese muffins

Perfect for a bite between meals, for a breakfast, or a main meal with a salad, these delicious muffins will win your heart

Nutrition per portion

  • 1/2 cup almond meal or almond flour
  • 1/2 cup flaxseed meal or hemp seed meal (or almond flour/meal)
  • 3 medium sized eggs
  • 1/2 tsp gluten free baking powder
  • 1/4 cup olive oil (coconut oil will also do)
  • 200g gound beef
  • 1/tsp garlic
  • salt and pepper to taste
  • 50g grated cheddar or mozzarella cheese
  • 1 tbsp butter
  • Pre-heat the oven to 180ºC
  • Oil a muffin pan (regular size) and set aside
  • In a small pan, add the butter, salt and garlic and let it fry for a couple of minutes
  • Add the meat and let it brown evenly
  • Separate 1/4 of the meat to a separate bowl
  • Let the meat cool down
  • In another bowl add the eggs and olive oil and bet until creamy
  • Add the flours, baking powder and seasoning and mix well
  • Add the 3/4 of the meat and the cheese and fold in until well mixed into the batter
  • Distribute the mix evenly in the muffin pan
  • Add the remaining meat on top of each muffin and press gently
  • Optionally, add grated cheese on top
  • Bake for app 35 minutes or until done
