Lemon Cups with Roasted Berries

Lemon cups sounds delicious right? And with the roasted berries, I take it to another level.

You know me by now. I am all about easy, quick, healthy and delicious recipes.

These lemon cups are no exception. They have the freshness and tangy of the lemons, and the richness and sweetness of the berries.

You can have it as a delicious dessert or as a sweet breakfast to make your day brighter!

Lemon Cups with Roasted Berries

This recipe is so so easy and yet so delicious. Great as a summer dessert, or for a sweet breakfast

Nutrition per portion

Ingredients
  • For the Roasted Berries
  • 1/2 cup Sliced strawberries
  • 10 Blackberries
  • 2 tbsp natural sweetener
  • 1 tbsp balsamic vinegar
  • 1 tbsp butter
  • For the lemon cups
  • 1 cup cream
  • 2 tbsp lemon juice
  • 2 tbsp lemon zest
  • 1 tbsp natural sweetener
Method
For the roasted berries
  • Pre-heat the oven to 180ºC
  • In an oven proof dish add all ingredients apart from the butter and mix well
  • Distribute the butter over the berries
  • Bake for 10 to 15 minutes (I like mine still firm and not mushy)
For the lemon cups
  • Heat the cream in a small saucepan until it boils
  • Low the heat and let it simmer for 2 to 3 minutes or until it thicks
  • Add the sweetener and mix well
  • Remove from the heat, and add the lemon juice and zest
  • Let it cool down completely
  • Add the berries, sprinkle with extra lemon zest

    So amazing! I don’t think I’ve had a dessert quite like this before! I’m having trouble getting good cream with the COVID19 lockdowns, but I will make this when I get some! Did you ever make it with coconut cream?

      Never JK. Coconut cream is hard to find here, but I believe it would work
