Carrot and Zucchini Warm Salad

Carrot and zucchini are such a wonderful combination of veggies, and so versatile, either sweet or savory.

This carrot and zucchini salad is one of my favorite side dishes.

To take it to another level, I use Zaatar (pronouced zah-tar) as a spice mix.

What is zaatar? It is a mix of herbs and seeds, commonly used in middle eastern cuisine, and that I use quite often.

It can be bought but trust me, nothing beats home made zaatar, and that is why I am also including the recipe for it.

Zaatar is a very versatile spice, with an earthy taste.

It can be used in almost anything from dips, to sprinkle on salads, for roast chicken, hummus, tomato salad, labneh, you name it.

With no delays, I leave you with this delicious and so easy to make Carrot and Zucchni Salad, with my twist – the zaatar.

Nutrition per portion

Ingredients
  • For the salad
  • 50g carrots
  • 50g zucchini
  • 1 tbsp olive oil
  • 1 tsp Zaatar (optional but makes all the difference)
  • salt and black pepper to taste
  • 1/2 tsp ground cumin
  • For the Zaatar Spice
  • 1 tbsp dried oregano
  • 1 tbsp dried thyme
  • 1 tbsp sumac or 1 tbsp finely grated lime zest
  • 1 tbsp cumin seeds
  • 1 tbsp coriander seeds
  • 1 tbsp toasted sesame seeds
  • ½ tsp salt
Method
For the Zaatar
  • Dry fry (toast) the cumin, coriander and sesame seeds, until fragrant
  • Grind the toasted seed to a fine powder
  • Mix all the ingredients and put into an airtight container
  • Sumac is the preferred choice (Amazon has it, as well as any store that has spices from North Africa or Middle East), but if you do not have it, use the lime zest
For the salad
  • Peel the carrots and zucchini
  • Using a mandolin or a sharp knife, thinly slice the carrots and zucchini
  • In a pan, add the olive oil and heat it on high eat
  • Add the spices and fry for a few seconds, until fragrant
  • Add the carrots and zucchini, mix and fry for a couple of minutes (it should still be crunchy)
  • Sprinkle with sesame seeds
