Keto Basquaise Breakfast

I was in the mood for something different for my brunch so I opted for a twist on Basquaise.

Basquaise comes from the French part of the Basque country, in South western France/North western Spain.

Originally, it was a dish with vegetables and bread, but today it is mainly a sauce made with bell peppers (capsicum), tomatoes, onion and garlic, cooked on low heat till the capsicum almost melts.

What I did was to do the exact same base for a Basquaise sauce, but added paprika, oregano, bacon and sausage, topped with two poached eggs and sliced avocado.

Nutrition per portion

Ingredients
  • 1 small (mine had 100g) sausage (choose a clean brand)
  • 3 slices of streaky bacon
  • 2 tbsp EVOO
  • 2 tbsp diced yellow bell pepper
  • 2 tbsp diced orange bell pepper
  • 2 tbsp diced red bell pepper
  • 1 tbsp tomato paste
  • 4 tbsp water
  • 2 tbsp chopped parsley
  • 1 tsp dried oregano
  • 1 tsp minced garlic
  • 1 tbsp chopped onion
  • 2 eggs poached (or fried depending on how you like it)
  • salt, black pepper and sweet smoked paprika to taste
Method
  • In a frying pan, fry the sausage and then slice it, reserve
  • Dry fry the bacon and chop it, reserve
  • Finely dice the bell peppers
  • In a frying pan add the olive oil, chopped onion and garlic and fry on low heat until almost melting
  • Add the tomato paste, seasoning, oregano, water and cook until it has a dark, rich color and the mix is thick and fragrant
  • Add the sausage and bacon and mix well
  • Put it on a serving dish, top with the eggs, chopped parsley and a slice avocado (optional)
