I was in the mood for something different for my brunch so I opted for a twist on Basquaise.
Basquaise comes from the French part of the Basque country, in South western France/North western Spain.
Originally, it was a dish with vegetables and bread, but today it is mainly a sauce made with bell peppers (capsicum), tomatoes, onion and garlic, cooked on low heat till the capsicum almost melts.
What I did was to do the exact same base for a Basquaise sauce, but added paprika, oregano, bacon and sausage, topped with two poached eggs and sliced avocado.
