Creamy Chicken and Spinach

The original recipe I learnt from a dear and recently deceased friend. One of my best friends, a fantastic woman that left us too soon. To you Cordélia, I dedicate this recipe.

Of course I did add some tweaks (as usual) and it is a favorite of everyone I make it for. It’s creamy, it’s delicious, it’s comforting, simple, easy and keto.

Creamy chicken and spinach

This looks like a very simple meal, bland and not much interesting. Do not fool yourselves, everyone that tries falls in love with it.

Nutrition per portion

Ingredients
  • 1 chicken breast (150g app)
  • 150ml heavy cream or cream
  • 1 tbsp chopped onion
  • 1 bay leaf
  • 2 tbsp olive oil
  • 100g baby spinach
  • salt and black pepper to taste
  • 1/4 tsp grated nutmeg
Method
  • Slice the chicken breast into strips
  • Chop or slice the onions
  • Add the olive oil to a pan and heat it, add the onions and bay leaf and fry until translucent
  • Add the chicken breast and cook until almost done
  • Season with the salt, pepper and nutmeg
  • Add the cream and spinach and cook for 2 or 3 minutes until the spinach is cooked
  • Adjust seasoning if needed, and add a bit of water if it becomes too thick
