Perfect Keto Avocado Toast

Avocado toast is taking the world by storm. When I am scrolling through my Instagram feed, I always see multiple posts of avocado toasts, with different toppings and it always looks delicious.

However, many people struggle to make it with poached eggs, as their eggs never come perfect. Guess what? Mine either… for a long time.

I was getting frustrated for not being able to cook a perfectly poached egg. But then, I found out that the secret is just so simple: FRESH (and I mean FRESH) eggs. Now, as I have a supplier, my eggs always come out perfect. So, do not feel like a failure, most probably it is not your fault. Just get fresh eggs and follow my method.

People on keto find it hard to have an avocado toast, because, you know, toast = bread, and most of the keto breads are just not nice. However, I promise you mine are. I have different options, and all of them based on my perfect bread. I did not so far have a negative review, so try it. I am giving you 3 options, all of them mine:

The Perfect Keto Avocado Toast

Perfectly poached eggs, on top of sliced avocado and the most delicious keto bread ever

Nutrition per portion

Ingredients
  • 2 FRESH eggs
  • 1/2 small avocado
  • 2 slices of keto bread (see the post for options)
  • salt and black pepper to taste
  • Optional to complement the dish
  • 6 to 8 cherry vine tomatoes
  • 2 slices of cooked streaky bacon
Method

The poached eggs - my secret to a perfect one

  • Fill a deep frying pan with water
  • Add 1 tbsp vinegar
  • Let it heat until small bubbles start forming
  • Crack the eggs (yes both) inside it, no need to swirl the water
  • Cook for 4 minutes (runny) on low heat (it should not boil)
  • Remove carefully with a spoon/spatula

Assembling

  • Toast the bread
  • In a dish put the two bread slices
  • Slice the avocado and put on top of the bread
  • Season to taste
  • Carefully add the eggs
  • Adjust seasoning
  • Add the optional ingredients
