Casseroles, what not to like about it? I like it in winter and in summer.
This time I was looking for a Mexican flavor and I got it with this recipe. It is not only delicious but so easy to make and so quick. It literally takes an hour, oven time included, and its that kind of dish that can be adapted to the cut of meat you have at home, or by replacing meat with veggies for a meat free version. I made this, last night, as a “trial run” for a Mexican Dinner Party that I am doing on Saturday night. It was delicious! I made it to the exact recipe and the chicken was so moist and full of flavour! It was also very easy and I think will multiply up for 10 and be a great hit! I just need to now think of a couple of vegetables to serve with it. Thank you so much!

Very nice. I do want the sauce a bit thicker though so I put in a tbsp of unsweetend tomatopuree to bind a bit more. Delicicious !!!!! Thanks a lot (again) 🙂
