Plate Licking Chicken Casserole

Plate Licking? Oh yeah. Casserole? Yebo! Chicken, cheese, coriander? Yes please.

Casseroles, what not to like about it? I like it in winter and in summer.

This time I was looking for a Mexican flavor and I got it with this recipe. It is not only delicious but so easy to make and so quick. It literally takes an hour, oven time included, and its that kind of dish that can be adapted to the cut of meat you have at home, or by replacing meat with veggies for a meat free version. Plate Licking Chicken Casserole

I promise I almost licked the plate after eating this dish. I was feeling like having a casserole in spite of the heat outside. Mexican food is one of my inspirations and I simply love the flavors and textures one can get by using spices, meat and cheese. The sharpness of the cheddar paired with the coriander makes this dish simply irresistable.

Nutrition per portion

Ingredients
  • 300g of chicken pieces or breast
  • 1 tsp sweet smoked paprika
  • 1/2 tsp grated nutmeg
  • 1/2 tsp ground cumin
  • 1 tbsp coconut oil
  • salt and black pepper to taste
  • For the sauce
  • 1/2 cup crushed canned tomato
  • 1 tbsp chopped onion
  • 2 tbsp chopped coriander
  • 1 tsp chopped garlic
  • 200 ml of hot water or chicken/veggie stock
  • 1/2 tsp chili flakes
  • 50 grams chopped red bell peppers
  • To assemble
  • 3/4 cups grated mozzarella and cheddar
  • 3 tbsp chopped coriander leaves
Method
  • Pre heat the oven to 200º C
  • Oil an oven proof dish and set aside
For the sauce
  • Add all ingredients to a sauce pan and let it simmer for 10 minutes
  • Blend it and return to the pan
  • Simmer  until it is thick enough
For the chicken
  • In a sauce pan add the coconut oil, paprika, cumin, salt, pepper and nutmeg and heat until fragrances develop
  • Add the chicken and fry until golden, stirring to coat it well in the seasoning
To assemble
  • Put the chicken into the prepared oven proof dish
  • Cover with the tomato sauce
  • Add the grated cheese and chopped coriander leaves
  • Add salt and black pepper to adjust seasoning if needed
  • Cook in the oven for 20 minutes, until the cheese melts and gets a beautiful golden color

      I do not give nutrition info. My brands are totally different where I live, and nutrition varies greatly from one brand to another. Not to mention ingredients. You will have to calculate it yourself using a tracking app

    I made this, last night, as a “trial run” for a Mexican Dinner Party that I am doing on Saturday night. It was delicious! I made it to the exact recipe and the chicken was so moist and full of flavour! It was also very easy and I think will multiply up for 10 and be a great hit! I just need to now think of a couple of vegetables to serve with it. Thank you so much!

      Thank you Diane. As it is quite rich I would go for a simple lettuce salad, or sauteed spinach
