Coffee and Choc Chip Mug Cake

Right on time for breakfast on another Monday morning.

Are you like me and detest Mondays? Well, if yes (or even if not), this mug cake will make you smile.

I was not a fan of mug cakes for a long time, because I found them bland, uninteresting and dry. As I am not the one to quit on any recipe, I started playing around with ingredients and baking time, and I now have quite a good collection of yummy mug cakes.

This one is moist, with nice texture, and delicious. Give it a try!

Coffee and Choc Chip Mug Cake

Coffee and Chocolate are a match made in heaven. This so easy and quick to make cake will brighten you day eaten with a nice cup of coffee

Nutrition per portion

Ingredients
  • 2 tbsp almond meal or flour
  • 1 tsp coconut flour
  • 2 tbsp strong black coffee
  • 1/2 tbsp dark chocolate chips
  • 1 tbsp cream
  • 1 tbsp xylitol, erythritol or stevia
  • 1 medium sized egg
  • 1/4 tsp gluten free baking powder
Method
  • Mix all ingredients apart from the chocolate chips, until well mixed
  • Fold in the chocolate chips
  • Bake in the microwave on full power for 60 seconds (you will have to adjust time according to your microwave)
  • Sprinkle a few chocolate chips on top

Dig in and be happy!!

 
You will get a cake like batter, add more coconut flour if needed, as consistency highly depends on brands
