Charming and delicious Zucchini and Chicken Bake

Charming… strange denomination for a dish right? But it is really what this is, a charming yumminess.

I came up with the recipe just by chance. I was at home with no ideas on what to cook and decided to use what was available.

I wanted to make stuffed zucchini rolls but looking at the baby zucchini we have here I knew it would not work. So I thought, “what about making a fun and beautiful looking dish with it? Like maybe a lattice pattern?”.

And so I did. Slowly the recipe came together and the end result was more than delicious, it is comforting, filling yet light on your stomach, with vibrant colors, and the charming detail of the lattice squares.

Charming zucchini and chicken bake

This recipe is so filling and delicious. The combination of veggies, cream and chicken makes it so special. If carrots are not part of your eating just omit, or replace with a vegetable you like

Nutrition per portion

  • 8 baby zucchini
  • 3 tbsp grated carrots
  • 3 tbsp grated red bell pepper
  • 2 tbsp chopped coriander
  • 1 tbsp coconut oil
  • 100ml heavy cream
  • salt, black pepper and nutmeg to taste
  • 200g raw chicken breast
  • 1 tbsp chopped onion
  • 1/2 tsp chopped garlic
  • 50g grated cheese
  • Pre-heat the oven t 200ºC
  • Cook the chicken breast in water seasoned with salt until well cooked, cool it down
  • Using a mandolin cut thin ribbons of zucchini longitudinally
  • On a board, create 8 lattice patterned squares with the sliced zucchini, reserve
  • Finely shred the chicken breast
  • In a pan heat the coconut oil with the garlic and onion and fry until the onion if soft and translucent
  • Add the chicken, bell pepper, coriander and carrots and fry for 5 min on low heat
  • Add the cream, mix well, season to taste and reserve
  • Oil an oven proof dish and arrange 4 lattice squares on the bottom
  • Add the chicken mix
  • Cover with another layer of the lattice squares
  • Add the grated cheese and coriander leaves
  • Bake for 10 minutes until the cheese is melted and golden
