This one is all that and much more. Juicy tender chicken breast with delicious crunchy vegetables and a lovely seasoning. A great meal that can be replicated for the family!

I am all about simple meals. Simple but tasty, I mean, bursting with flavor. The humble chicken breast is so often demonized for being tasteless and dry. Not this one. It is juicy, flavorful, truly delicious. Paired with the vegetables and spices, it is a perfect meal.

Nutrition per portion

  • 2 medium sized chicken breasts
  • 7 green asparagus spears
  • 1 small onion, sliced
  • 2 tbsp olive oil
  • 1 tbsp coconut oil
  • 50g chopped bell peppers
  • 1 rosemary sprig
  • 8 rosa tomatoes
  • 1 tsp sweet paprika
  • 1tsp chilli pepper flakes
  • salt and black pepper to taste
  • 1 tsp groung cumin
  • Pre heat the oven to 200ºc
  • Cut the chicken breasts in thin stripes
  • Season with the paprika, chili flakes and cumin
  • Eat the coconut oil in a skillet or pan and fry the chicken until golden and crispy (5 minutes)
  • Add the sliced onions, chopped peppers, sliced asparagus and tomatoes to the pan
  • Add the chopped rosemary sprig
  • Season to taste with salt and black pepper
  • Drizzle the olive oil  over the meat and vegetables
  • Put in the oven for 20 minutes
