One pot Chicken breast with Vine Tomatoes and Fresh Basil

One pot meals are always welcome in my house. They are excellent options for busy days, when you get home tired, and save so much time on cleaning the dishes later!!


I do not have much to say as far as this recipe goes apart from: easy, quick to make, colorful, tasty, healthy, nutritious and excellent to meet your protein requirements. Just give it a try.



One pot chicken breast with vine tomatoes and basil

Nutrition per portion

  • 1 chicken breast (180g approximately)
  • 100g vine tomatoes
  • Basil leaves
  • 30g cubed bacon
  • 2 tbsp coconut oil
  • salt, black pepper and sweet smoked paprika to taste
  • Pre-heat the oven to 200ºC
  • Heat 1 tbsp of coconut oil in a frying pan
  • Season the chicken breast with salt, black pepper and sweet smoked paprika to taste
  • Fry the chicken breast until it is golden and with a crispy crust
  • Arrange the chicken breast in an oven proof dish, add the bacon and vine tomatoes and drizzle the remaining coconut oil on top
  • Cook in the oven for 20 minutes
  • Add fresh basil leaves
