Meat free keto breakfast with the EASIEST AND SIMPLEST hollandaise Ever

Meat free Breakfast? Yes, for the ones that do not eat meat. It is keto, delicious, and with paired with the easiest Hollandaise ever. I love hollandaise sauce, its richness, color, tangy taste, makes it one of my favorite items for a Sunday brunch. BUT (there is always a but right) many people complain how time-consuming it is and how easy it is to fail the recipe and end up with a miserable looking hollandaise, curdled and not appetizing at all. Yes, I share the pain. I am usually quite successful in making hollandaise but a couple of times I failed miserably and ended up with a messy mix. This recipe is totally fool-proof, takes minutes to make and no one will be able to distinguish between this Hollandaise and the standard one. Give it a try.

This recipe is all about the hollandaise. It is the easiest and fool proof hollandaise I have ever made. It is ready in literally 2 minutes, without the pain of having to whisk endlessly it over a water bath and failing to get the desired consistency. And even better, it is for ONE person. Can it get better than this? Hardly!

Nutrition per portion

Ingredients
  • For the Hollandaise
  • 1 egg yolk
  • 1 tbsp hot water
  • 1/4 cup melted butter
  • 1 tsp lemon juice
  • Salt and pepper to taste
  • For the full breakfast
  • 80g smoked trout or salmon
  • 2 medium sized shitake mushrooms fried in 1 tsp butter
  • 2 tbsp creme fraiche or sour cream
  • 1 tbsp chopped dill
  • 1 tbsp fish roe (optional)
  • 2 eggs poached (or fried depending on how you like it)
Method
Hollandaise
  • In a microwave proof bowl add the egg yolk, lemon juice, salt, pepper and 1/2 tbsp of hot water, whisking until you get a nice foam and smooth mix
  • Slowly add the butter whisking continuously
  • Microwave on high for 10 seconds, whisk, repeat, until set and thick enough to your taste
  • Set aside
Assembling the dish
  • Mix the creme fraiche with the chopped dill
  • Arrange the salmon on a plate, add the creme fraiche on top, and sprinkle with the fish roe
  • Add the shitake mushrooms
  • Add the poached eggs, pour the hollandaise on top (if cold and too thick, add the remaining hot water and mix)
