Red Velvet Mini Muffins – Keto and Perfect

keto red velvet mini muffins

Red velvet muffins were on my list of recipes to “ketofy” for a long time. Finally I got there and I am very happy how these turned out. I find it really similar to the standard red velvet cakes I have tasted.

I did take a bit of time perfecting these red velvet beauties and I believe these are now a winner, that will satisfy your sweet tooth.

If you are allergic to nuts, you can try to make it using coconut flour instead of almond flour, but they will be denser and drier and the proportion between liquid and solids will have to be adapted.

Do you this these will be a favorite of yours? If you tried it, if you want to see your favorite recipe ketofied, just leave a comment and I will try to accommodate your needs.

For these keto muffins I used a mini muffin pan bought on Amazon, but you can use a regular size muffin pan. I find the mini ones really handy and cute, with the added advantage that you eat less Ahahhhh!
