Red velvet muffins were on my list of recipes to “ketofy” for a long time. Finally I got there and I am very happy how these turned out. I find it really similar to the standard red velvet cakes I have tasted.
I did take a bit of time perfecting these red velvet beauties and I believe these are now a winner, that will satisfy your sweet tooth.
If you are allergic to nuts, you can try to make it using coconut flour instead of almond flour, but they will be denser and drier and the proportion between liquid and solids will have to be adapted.

For these keto muffins I used a mini muffin pan bought on Amazon, but you can use a regular size muffin pan. I find the mini ones really handy and cute, with the added advantage that you eat less Ahahhhh!

Ingredients
- 4 eggs
- 1/3 cup heavy cream
- 1/2 cup almond flour
- 1/4 cup coconut flour
- 1/4 cup macadamia nut oil (coconut oil will do just fine)
- 1/4 cup raw cocoa powder
- 1tsp vanilla extract
- 1/4 cup swerve (or another sweetener you like, just adjust to taste)
- 1/2 tsp beetroot powder or 3 to 4 drops of red food coloring
- 1 tsp gluten free baking powder
