Speedy LCHF English Muffin

It does not have the same texture as an English Muffin, but is is quite a nice replacement and so easy and fast to make. At 2.1 net carbs per serving it is a very good option



  • 1 tbsp almond meal (I did grind my almonds on a coffee grinder, almond flour is also acceptable)
  • 1 tbsp coconut flour
  • 1/2 tsp apple cider vinegar
  • 1/2 tsp gluten free baking powder
  • 1 tbsp butter
  • 2 medium size eggs
  • 2 tbsp coconut milk (I used home made)
  • 1 tbsp coconut oil
  • salt to taste


  • Melt the butter with the coconut oil
  • separate the egg whites from the yolks
  • Beat the whites until stiff peaks form
  • Add all dry ingredients in a bowl and mix well
  • Add the melted butter to the egg, vinegar and coconut milk and mix well
  • Add the liquid mixture to the dry mixture  and mix it well
  • Gently fold the egg whites in the batter until well mixed but still airy
  • Pour the batter into oiled ramekins and microwave them for 1 minute (depending on the microwave time may change)
  • Let the muffins cool down and for a final touch, dry fry them in a frying pan until golden
  • Indulge and be happy

    Claro que não tem a textura de um muffin inglês normal, mas é uma ótima substituição, delicioso e rápido, e bastante baixo em carbo, com 2.1g de carbo liquido por porção




    • 1 cs de amêndoa com casca moída (farinha de amêndoa também funciona)
    • 1 cs de farinha de coco
    • 1/2 cchá de vinagre de sidra
    • 1/2 cchá de fermento químico sem glúten
    • 1 cs de manteiga
    • 2 ovos médios
    • 2 cs de leite de coco (usei caseiro)
    • 1 cs de óleo de coco
    • sal a gosto


  • Derreta a manteiga com o óleo de coco
  • Separe as gemas das claras
  • Bata as claras até ficar em neve firme
  • Junte todos os ingredientes secos em uma tigela e misture
  • Adicione a manteiga/óleo derretidos ao ovo, vinagre e leite de coco e misture bem
  • Junte a mistura seca à líquida e mexa até ficar uniforme
  • Envolva as claras
  • Coloque a massa em forminhas untadas e leve ao microondas por 1 minuto (dependendo do micro poderá levar mais tempo)
  • Deixe arrefecer, retire do recipiente e para finalizar asse na chapa ou frigideira, sem óleo, até ficar dourado
