I must tell you I was resistant for years, to the idea of a cold soup. But as I refuse to give in to my limits and dogmas, I tried gazpacho and instantly fell in love. Its just a perfect balance of acidity, sweetness and freshness that blows our minds away
Ingredients
- 1kg peeled ripe tomatoes
- 2 cloves of garlic
- 30g sliced green pepper
- 25g sliced red pepper
- 50g chopped onions
- 70g cucumber, peeled and sliced
- 40ml red wine vinegar,
- Salt and black pepper to taste
- 50ml extra virgin olive oil
- 1tsp smoked paprika
- 10 ice cubes
- 300ml water
Directions
- Put all of the ingredients, apart from the water and ice cubes, into the bowl of a good blender or a thermomix. Blend at medium speed for 45 secs (blender) or 30 seconds on Speed 5 (thermomix)
- Blend for another 3 minutes at high speed (blender) or Speed 10 (thermomix)
- Add water and ice to taste and blend until very well mixed (speed 8 for 1 minute on the thermomix)

- 50 g de cebolas picadas
- 70g de pepino, descascado e fatiado
- 40ml de vinagre de vinho tinto
- Sal e pimenta preta a gosto
- 50ml de azeite extra virgem
- 1 cchá de paprika defumada
- 10 cubos de gelo
- 300 ml de água
