LCHF Eggplant Lasagne/Lasanha LCHF de Beringela

Better than a traditional lasagne, this dish gets a twist of my own by adding pepperoni and emmental cheese, giving it a richer taste and a crispy texture

  • 185g ground meat
  • 30g cubed bacon
  • 185g sliced eggplant
  • 1 tsp minced garlic
  • 2tbsp raw onions
  • 1/2 cup canned tomatoes (clean brand
  • 20g grated emmental cheese
  • 6 slices of pepperoni
  • seasoning to taste (I used cumin, paprika, salt and black pepper)
  • 1 tbsp olive oil or coconut oil


  • Pre heat the oven to 200ºC
  • Slice and salt the eggplants and leave them to rest for 30min
  • Drain, pat dry and grill or dry fry until soft
  • On a pan, heat the olive oil, add the garlic and let it fry for a few seconds, add the chopped onion and seasoning and fry until the onion is soft
  • Add the meat and bacon and fry until its evenly browned
  • Add the tomatoes and simmer for 10 minutes
  • Oil an oven proof dish and line it with the egg plant, meat, and another layer of eggplant.
  • Add the pepperoni and sprinkle the cheese on top
  • Bake it until lightly golden in color

    Melhor que a lasanha tradicional, este prato recebe um toque meu, adicionando pepperoni e emmental que lhe dão um sabor mais rico e uma textura mais crocante

    • 185g de carne moída
    • 30g de bacon em cubos
    • 185g de beringela fatiada
    • 1 colher de chá de alho picado
    • 2tbsp cebola picada
    • 1/2 xícara de tomate enlatado
    • 20g de queijo emmental ralado
    • 6 fatias de pepperoni
    • tempero a gosto (usei cominho, pimentão, sal e pimenta preta)
    • 1 colher de sopa de azeite ou óleo de coco


  • Pré-aqueça o forno a 200ºC
  • Corte e salque as berinjelas e deixe-as descansar por 30 minutos
  • Drene, seque e grelhe ou frite a seco até ficarem macias
  • Em uma panela, aqueçao azeite, adicione o alho e deixe fritar por alguns segundos,
  • Adicione a cebola picada e temperos e frite até a cebola estar macia
  • Adicione a carne e o bacon e frite até ficar castanha
  • Adicione os tomates e cozinhe por 10 minutos
  • Unte um refractario para lasanha e coloque a beringela, por cima a carne e depois  outra camada de berinjela. Adicione o pepperoni  e polvilhe com o queijo
  • Asse até ficar com uma cor levemente dourada
