Gooey, Scrumptious LCHFChoc Chip Cookies

These cookies are by far my favorite. They are gooey, so full of flavor and texture, just like our grandma used to make but only healthy

Ingredients

  • 2 cups almond flour
  • 2 tbsp softened butter
  • 1 tsp maple extract (optional)
  • 2 tbsp powdered xylitol/erythritol (or to taste) or xylitol syrup
  • 2 medium eggs
  • 1/2 tsp gluten free baking powder
  • salt to taste (do not skip this!) – I used 1/3 tsp
  • 1tsp vanilla extract
  • 1/2 cup of chopped 85% chocolate

Directions

  • Preheat the oven to 180ºC. Line a tray with oiled baking paper,
  • Whisk the butter with the eggs, extracts and xylitol
  • Add the dry ingredients and mix well.
  • Add the chocolate and mix
  • Form small balls and put them on the lined tray, 2cm apart from each other. Press gently with a fork or your fingers
  • Bake for 15 min, until golden
  • Let them cool down completely before removing from the tray

Ingredientes

  • 2 canecas de farinha de amêndoa
  • 2 cs de manteiga amolecida
  • 1 cs de extrato de maple (opcional)
  • 2 cs de xylitol/erythritol em pó (ou a gosto) ou xarope de xylitol
  • 2 ovos médios
  • 1/2 cchá de fermento sem gluten (pode usar com glúten se quiser)
  • sal a gosto (dá um toque especial!) – usei 1/3 cchá
  • 1 cs de extrato de baunilha
  • 1/2 caneca de chocolate 85% em pedacinhos

Preparo

  • Pré aqueça o forno a 180ºC, coloque papel cera untado em um tabuleiro e reserve
  • Bata a manteiga com os ovos, xylitol e os extratos com um fouet até ficar bem misturado
  • Adicione todos os ingredientes secos menos o chocolate e misture bem
  • Adicione o chocolate em pedaços e misture
  • Forme pequenas bolas com as mãos e coloque no tabuleiro a 2 cm de distância umas das outras, pressione ligeiramente com os dedos ou um garfo
  • Asse por 15 min, ou até ficarem dourados
  • Deixe arrefecer completamente antes de remover do tabuleiro
