LCHF Chocolate mousse – THE mousse

Decadent Chocolate Mousse

A Mousse so delicate, airy and delicious that will certainly make you want to indulge with the whole family, ketoers and non ketoers, as it is the best mousse I have ever tasted

Ingredients

  • 200g 90% dark chocolate, chopped (I used Lindt)
  • 1 heaped tbsp butter (not melted)
  • Erythritol to taste (I used 3 tbsp)
  • 6 eggs separated
  • 1/2 tsp vanilla extract
  • pinch of salt and cayenne pepper – optional

Directions

  • Melt the butter and chocolate over a pan with simmering water until completely melted and homogenous in texture. Let it cool down for a couple of minutes
  • Beat the egg yolks with the erythritol, vanilla, salt and pepper
  • Beat the egg whites until soft/firm peaks form
  • Add the chocolate mix to the egg yolk mix and beat well
  • Fold the egg whites gently, in batches, carefully to not overmix. You will get an airy, cake batter like texture
  • Divide the mousse among 6 ramekins and put them in the fridge to set, for a couple of hours .

Uma mousse tão delicada e aerada quanto deliciosa, que certamente gostará de dividir com toda a família, low carb ou não, porque o sabor é tão delicioso que nem parece dieta.

Ingredientes

  • 200g de chocolate 90% (usei Lindt)
  • 1 colher de sopa bem cheia de manteiga não derretida
  • Erythritol ou xilitol a gosto (usei 3 cs)
  • 6 ovos separados
  • 1/2 cchá de extrato de baunilha
  • pitada de sal e pimenta caiena – opcional

Preparo

  • Derreta a manteiga e chocolate em banho maria até estar completamente derretido e ter uma textura brilhante e homogénea. Deixe arrefecer uns minutos
  • Bata as gemas com o erythritol, baunilha, sal e pimenta
  • Bata as claras em neve
  • Adicione a mistura de chocolate à mistura de gemas e bata bem
  • Envolva delicadamente as claras aos poucos com cuidado para não misturar demais. A massa deve ficar aerada, leve e com consistência de massa leve de bolo
  • Divida a mousse entre 6 ramekins e coloque na geladeira para solidificar, por 2 horas mais ou menos
