Ketolicious Pecan Nut Squares
With only three main ingredients this cake is a perfect treat and goes so well with a cup of coffee. No eggy taste, its moist, fluffy and delicate in taste
Ingredients
- 300g pecan nuts (any other nuts will work just fine)
- 7 eggs
- 1tsp vanilla extract (opcional)
- xylitol to taste ( I used 4 tbsp)
Directions
- Preheat oven to 180 degrees. Spray a brownie square baking pan with nonstick cooking spray; line pan with parchment paper. Spray parchment paper and set aside.
- Separate the yolks from the egg whites
- Blitz the nuts in a food processor until you get a meal/flour consistency
- Beat the egg yolks with the xylitol and vanilla extract
- Beat the egg whites until getting stiff peaks
- Add the ground nuts to the egg yolk mix and beat for 1 to 2 minutes
- Gently incorporate the egg whites into the egg and nut mix, in a folding motion until they are well combined but still airy, DO NOT OVERMIX
- Bake for 30 minutes and let it cool in a drying rack before cutting in small squares
Quadrados de Nozes Pecan
Com somente três ingredientes este bolo é uma delícia perfeito para acompanhar um café. Não tem gosto a ovo, é húmido, delicado no sabor e super fofinho.
Ingredientes
- 300g de nozes pecan (qualquer outra noz serve)
- 7 ovos
- 1tsp extrato de baunilha (opcional)
- xylitol a gosto (usei 4cs)
Preparo
- Pré-aqueça o forno a 180 graus.
- Unte bem uma assadeira quadrada com spray antiaderente; Colocar papel cera e untar. Reservar.
- Dividir as claras das gemas
- Moer as nozes no processador até ficar com textura de farinha
- Bater as claras de ovo em neve firme
- Bater as gemas com o xylitol e baunilha até ficar bem cremoso
- Juntar as nozes e bater bem
- Envolver as claras na massa, cuidadosamente até ficar uma mistura aerada mas homogenea – NÃO MISTURE DEMAIS
- Asse por 30 minutos e deixe esfriar antes de cortar em pequenos quadrados
