Roasted cauliflower and garlic mash

Creamy, velvety and with the scent of roasted garlic mixed with butter and nutmeg it is a perfect side dish for roasted meats and steaks

Ingredients

  • 1/2 head of a large cauliflower
  • 3 tbsp butter
  • 4 or 5 cloves of garlic
  • 2 tbsp olive oil
  • salt, pepper and nutmeg to taste
  • 1/2 tsp organic turmeric powder
  • 150ml of double cream/heavy whipping cream

Directions

  • Preheat oven to 170 degrees. Oil a baking dish.
  • Cut the cauliflower in small pieces.
  • Put the cauliflower and the garlic cloves (skin on) in the baking dish, season with salt and pepper, drizzle with the olive oil, and roast for 30minutes,
  • Peel the garlic cloves and put them with the roasted cauliflower in a bowl. Add the cream and butter and blitz using a hand held mixer, until you get an even consistency
  • Put the puree into a pan, adjust seasoning and add the turmeric. Simmer of a very low heat stirring constantly until you get a creamy mash, with the texture of potato mash. Adjust seasoning if needed. Serve sprinkled with chopped parsley

Purê de couve flor e alho assado

Cremoso, sedoso e com o perfume do alho assado misturado com a manteiga e noz moscada, é o acompanhamento perfeito para carne assada ou bife

Ingredientes

  • 1/2 couve flor
  • 3 cs de manteiga
  • 4 ou 5 dentes de alho com pele
  • 2 cs de azeite de oliva
  • sal, pimenta do reino e noz moscada a gosto
  • 1/2 cchá de cúrcuma orgânica em pó
  • 150ml de nata ou creme de leite

Preparo

  • Pré-aqueça o forno a 170 graus. Unte um refrátario
  • Corte a couve flor em pequenos pedaços
  • Coloque a couve flor e os dentes de alho com a pele no refratário, tempere com sal e pimenta do reino e coloque o azeite de oliva por cima. Asse por 30minutos,
  • Retire a pele dos dentes de alho e coloque-os junto com a couve flor em um recipiente. Adicione as natas e a manteiga e moa com a varinha mágica até ficar lisinho e com consistência uniforme
  • Coloque o purê em uma panela, adicione a cúrcuma, ajuste o tempero. Ferva em fogo baixinho mexendo constantemente, até atingir a consistência desejada, semelhante a purê de batata. Ajuste o tempero e sirva polvilhado com salsinha picada
