Greek Tzatziki with a Twist

Ingredients

  • 1 cup grated cucumber
  • 1 1/2 cups greek yogurt
  • 1 tbsp lemon rind
  • 1 tbsp lemon juice
  • 1 clove minced garlic
  • 3 tbsp chopped dill
  • Salt and pepper to taste
  • Tabasco sauce to taste
  • 1 tbsp Hemp seed oil
  • 2 tbsp good quality extra virgin olive oil

Directions

The key in this recipe is to strain the yogurt and the cucumbers, as instead of getting a mushy mix full of water and with no grace, you will get a fresh tasting, taste bud tantalizing and creamy tzatziki. The final touch? A tablespoon of hemp seed oil to give it a nutty hearty taste, unique!

  1. Put the yogurt in a cheese cloth and hang it into a bowl in the fridge, letting it drain for a couple of hours, or preferably overnight.
  2. Grate the cucumber, add salt, put it on a cheese cloth and let it drain, on top of a tray, for 1/2 hour. Squeeze the cucumber to drain it further
  3. On a bowl, add the yogurt, cucumber, salt, tabasco, lemon rind, lemon juice, chopped dill and olive oil and mix well. Serve topped with the hemp seed oil.

Ingredientes

  • 1 xícara de pepino ralado
  • 1 1/2 xícaras de iogurte grego
  • 1 cs raspa de limão
  • 1 cs suco de limão
  • 1 dente de alho amassado
  • 3 cs de “dill”- aneto picado
  • Sal e pimenta a gosto
  • Molho Tabasco a gosto
  • 1 cs de óleo de cânhamo
  • 2 cs de azeite de oliva extra virgem de boa qualidade 

 

Preparo

O pulo do gato desta receita é dessorar o iogurte e escorrer os pepinos. No lugar de uma pasta liquida e sem graça você terá uma pasta fresca, que canta na boca, e cremosa. O toque final fica por conta do óleo de semente de cânhamo, que confere um sabor único (mas se não tem faz na mesma)!

  1. Coloque o iogurte para dessorar por algumas horas, ou de preferência de um dia para o outro na geladeira.
  2. Rale o pepino e coloque numa tela sobre um tabuleiro, polvilhe sal e deixe drenar por meia hora. Esprema o pepino para secar mais ainda.
  3. Numa tigela junte todos os ingredientes e misture bem. Adicione o óleo de cânhamo e mexa ligeiramente. Sirva gelado.
