Roasted Red pepper and Tomato soup/Sopa de tomate e pimentão

Bursting with flavour and fragrant, this soup will be a great winter dinner .

Roasted Red Pepper and Tomato Soup


 

Ingredients

  • 1 tbsp butter
  • 3 medium tomatoes
  • 1 red large bell pepper
  • 2 tbsp chopped onion
  • 1/2 tsp minced garlic
  • 500ml chicken or vegetable stock or water
  • 100 sour cream or HWC
  • Salt, pepper and paprika to taste

Directions

  • Roast the tomatoes and the pepper (I usually do it in the oven) at 200ºC for 15min. Peel the tomatoes and pepper and slice thinly
  • Melt the butter in a pan, add the onions, garlic and seasoning and cook it until soft and translucent
  • add the tomatoes and bell pepper and cook for 5min
  • add the stock or water and simmer for 15min
  • let it cool down and blitz in a food processor or blender
  • put it into a pan, simmer for 10min. Add the sour cream and lightly mix
  • adjust seasoning and serve.

Sopa de Pimentão Assado e Tomate

 

Ingredientes

  • 1 cs manteiga
  • 3 tomates de tamanho médio
  • 1 pimentão vermelho grande
  • 2 cs de cebola picada
  • 1/2 cchá de alho amassado
  • 500ml de caldo de frango, de vegetais ou água
  • 100 de nata azeda ou nata
  • Sal, pimenta e paprika a gosto


Preparo

  • Assar o tomate e pimentão no forno a 200 graus por 15min, descascar e cortar em pedaços pequenos
  • Derreter a manteiga, adicionar a cebola, alho e temperos e cozinhar até ficar transparente
  • adicionar o tomate e pimentão e cozinhar 5min
  • adicionar o caldo ou água e cozer baixinho por 15min
  • deixar arrefecer e liquidificar
  • colocar numa panela e deixar cozinhar baixinho por 10min. Adicionar a nata e mexer ligeiramente
  • ajustar os temperos e servir.

    OK I love tomato soup and this on looks like a soup I would like I am going to make this to go with dinner later. I will let you know what i think!
