Baked eggs with veggies and cheese Ovos no forno com vegetais e queijo

Very good for breakfast or a winter night, filling and delicious.



  • 2 sliced shitake mushrooms
  • 1tbsp of butter
  • 1 cup raw spinach
  • nutmeg, black pepper and salt
  • 2tbsp heavy whipping cream
  • 2 slices Gruyere cheese
  • 1 egg
  • 2 slices of fried, crispy bacon


Sautée the shitake mushrooms in butter until crisp, add the spinach and sautee for 2 to 3 minutes. Season to taste with nutmeg, salt and black pepper and put it in an oven proof dish. Add the cream and 1 slice of Gruyere cheese (any cheese that melts well will work). Add the raw egg and the other slice of cheese, sprinkle with thyme and bake in a water bath at 200ºC for 15 minutes (runny yolk). Let in rest for 5 minutes, put the crispy bacon on top and dig in..

Excelente num café da manhã caprichado ou para um jantar de inverno.



  • 2 cogumelos shitake fatiados
  • 1 cs de manteiga
  • 1 xícara de espinafre cru
  • Noz-moscada, pimenta preta e sal
  • 2tbsp de creme de leite ou nata
  • 2 fatias de queijo Gruyère
  • 1 ovo
  • 2 fatias de bacon frito, crocante


Saltear os cogumelos shitake em manteiga até ficar crocante. Adicionar o espinafre e saltear por 2 a 3 minutos. Temperar a gosto com noz-moscada, sal e pimenta preta e colocar em um refratário. Adicionar o creme de leite e 1 fatia de queijo Gruyère (qualquer queijo que derrete bem funciona). Adicione o ovo crus e a outra fatia de queijo, polvilhe com tomilho e asse em banho-maria a 200ºC por 15 minutos (gema líquida). Deixe descansar por 5 minutos, coloque o bacon crocante em cima e delicie-se.
